From the olive tree to your table

Three essential stages for the highest-quality EVOO.

Reception

Olives are washed with sprayed water to remove dust and mud, weighed, and transferred to the hoppers.

Grinding

Using a stainless steel hammer mill, the olives are crushed and beaten at a temperature below 27°C.

Storage

The oil is filtered and stored in stainless steel tanks at 18-20°C under a nitrogen atmosphere.
